  4. 4. Ripen in safety 4. Like in every family, some of our children grow faster and ripe earlier, others need the safety of the mother tree a little longer
  5. 5. Ripe cherries 5. We only process the perfect & ripe cherries with full flavour and therefore we pick the beans by hand
  6. 6. Careful sundrying 6. Traditional handcrafted sun drying needs a lot of care and the small famers have to turn the coffee every day for up to four weeks
  7. 7. Dried cherries 7. The dried cherries are now 'pulped' to split the golden-brown bean from its safety cherry-body
  8. 8. The pulper 8. The 'pulper' is a small wheel that squeezes the bean out of the cherry
  9. 9. Cherries splitted 9. Tasty cherries and their cover are spitted but still mixed together
  10. 10. The shaker 10. The 'bean-shaker' shakes the cherry skin into the middle and separates from our desired golden-coffee beans at the borders
  11. 11. Cherry skins 11. The cherries skins are now re-used in our families gardens for composting or for heating
